Description
Enjoy these Lemon Buttercream Cupcakes, featuring fluffy lemon cake topped with rich lemon buttercream, perfect for any celebration!
Instructions
- Preheat the oven to 190 C (170 fan) / 375 F / gas 5 and line a cupcake tin with paper cases.
- Combine the flour, sugar, eggs, butter and lemon zest in a bowl and whisk together for 2 minutes.
- Divide the mixture between the paper cases, then transfer to the oven and bake for 15-20 minutes.
- Test with a toothpick, if it comes out clean, the cakes are done. Transfer the cupcakes to a wire rack and leave to cool.
- To make the buttercream, beat the butter with a wooden spoon until light and fluffy then beat in the icing sugar a quarter at a time.
- Use a whisk to incorporate the lemon juice, then whisk for 2 minutes.
- Spoon the buttercream into a piping bag fitted with a star nozzle and pipe a swirl on top of each cupcake.
- Sprinkle with sugar nibs.

- 110 g / 4 oz / 1/2 cup caster (superfine) sugar
- 110 g / 4 oz / 1/2 cup butter, softened
- 2 large eggs
- 1 lemon, zest finely grated
- 110 g / 4 oz / 1/2 cup butter, softened (for the buttercream)
- 225 g / 8 oz / 2 cups icing sugar (for the buttercream)
- 2 tbsp lemon juice (for the buttercream)
- 2 tbsp sugar nibs (for the buttercream)
