Description
These chocolate-topped mini cupcakes are great for snacking and celebrations. These mini bites melt in your mouth giving you a rich chocolatey flavor. This recipe only takes five main ingredients to prepare.
Instructions
- Preheat the oven to 190°C (170° fan)/ 375 F/ gas 5 and line a 36-hole mini cupcakes tin with paper cases.
- Combine the flour, sugar, butter, eggs, and vanilla extract in a bowl and whisk together for 2 minutes or until smooth.
- Divide the mixture between the paper cases and bake for 10-15 minutes.
- Test with a wooden toothpick, if it comes out clean, the cakes are done.
- Transfer the cakes to a wire rack and leave to cool.
- Melt the chocolate in a microwave or bain-marie.
- Dip the top of each cake in the chocolate and sprinkle with nuts, then leave to set.

- 110g/ 4oz/ 1/2 cup self-raising flour, sifted
- 110g/ 4oz/ 1/2 cup caster (superfine) sugar
- 110g/ 4oz/ 1/2 cup butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 110g/ 4oz/ 1/2 cup dark chocolate, minimum 60% cocoa solids, chopped
- 2 tablespoon hazelnuts, chopped
