Description
These moist and soft mini cupcakes have a perfect blend of cheesy and almond flavor. This unique balance is great for tea parties, snacking and brunches, etc. Add a twist on classic flavors by adding this on your menu.
Instructions
- Preheat the oven to 180°C (160° fan)/ 350 F/ gas 4 and oil a 24-hole silicone muffin tin.
- Beat the egg in a jug with the oil, yogurt, almonds and cheese until mixed well.
- Mix the flour, raising agents and salt in a bowl, then pour in the egg mixture and stir just enough to combine.
- Divide the mixture between the moulds, then bake in the oven for 10-15 minutes.
- Test with a wooden toothpick, if it comes out clean, the cupcakes are done.
- Serve warm.

- 2 large eggs
- 120ml/ 4fl. oz/ 1/2 cup sunflower oil
- 180ml/ 6fl. oz/ 3/4 cup Greek yogurt
- 75g/ 2 1/2 oz/ 1/2 cup flaked (silvered) almonds
- 110g/ 4oz/ 1 cup Reblochon cheese, cubed
- 225g/ 8oz/ 1 1/2 cups plain (all purpose) flour
- 2 teaspoon baking powder
- 1/2 teaspoon bicarbonate of (baking) soda
- 1/2 teaspoon salt
