Description
These peanut butter cupcakes have the creamy and nutty flavor of the peanut butter and the sprinkles of peanuts on top is just pure delight.
Instructions
- Preheat the oven to 190°C (170° fan)/375 F/ gas 5 and line a 12-hole cupcake tin with paper cases.
- Combine the flour, sugar, butter, eggs, and crunchy peanut butter in a bowl and whisk together for 2 minutes.
- Divide the mixture between the paper cases, then transfer to the oven and bake for 15-20 minutes.
- Transfer the cakes to a wire rack and leave to cool.
- To make the buttercream, beat the butter and smooth peanut butter together with a wooden spoon until light and fluffy then beat in the icing sugar a bit at a time.
- Use a whisk to incorporate the milk, then whisk for 2 minutes.
- Spoon the buttercream into a piping bag fitted with a star nozzle and pipe a swirl on top of each cake.
- Sprinkle with chopped peanuts.

- 110g/ 4oz/ 1/2 cup caster (superfine) sugar
- 110g/ 4oz/ 1/2 cup butter, softened
- 2 large eggs
- 2 tablespoon crunchy peanut butter
- 110g/ 4oz/ 1/2 cup butter softened (To decorate)
- 2 tablespoon smooth peanut butter (To decorate)
- 225g/ 8oz/ 2 cups icing (confectioners') sugar (To decorate)
- 2 tablespoon milk (To decorate)
- 2 tablespoon chopped peanuts (To decorate)
