Description
These chocolate and fennel fondants are rich in flavor with their velvet texture. It is infused with aromatic essence of fennel which gives you a unique twist on flavor on special occasions.
Instructions
- Oil 6 mini pudding basins and dust the insides with cocoa.
- Melt the chocolate, butter, and sugar together in a saucepan, stirring to dissolve the sugar.
- Leave to cool a little then beat in the eggs and egg yolks and fold in the flour and fennel.
- Divide the mixture between the pudding basins, then chill them for 30 minutes.
- Preheat the oven to 180°C (160° fan)/ 350 F/ gas 4 and put a baking tray in to heat.
- Transfer the fondants to the heated baking tray and bake in the oven for 8 minutes.
- Leave the fondants to cool for 2 minutes, then turn then out of their moulds and serve immediately.
Ingredients
- 2 tablespoon unsweetened cocoa powder
- 150g/ 6oz/ 2/3 cup dark chocolate, minimum 60% cocoa solids, chopped
- 150g/ 6oz/ 2/3 cup butter, chopped
- 85g/ 3oz/ 1/3 cup caster (superfine) sugar
- 3 large eggs
- 3 egg yolks
- 1 tablespoon plain (all purpose) flour
- 1 teaspoon ground fennel seeds
