Description
These wholemeal orange and chocolate chip muffins are packed with the goodness of wholemeal flour and the perfect blend of orange zest with chocolate chips which makes it nutritious as well as delicious. This can be enjoyed as a snack and even for breakfast.
Instructions
- Preheat the oven to 180°C (160° fan)/350 F/ gas 4 and line a 12-hole muffin tin with paper cases.
- Beat the egg in a jug with the oil and milk until mixed well.
- Mix the flour, baking powder, sugar, orange zest and chocolate chips in a bowl, then pour in the egg mixture and stir just enough to combine.
- Divide the mixture between the moulds, then bake in the oven for 20-25 minutes.
- Test with a wooden toothpick, if it comes out clean, the muffins are done.
- Transfer the muffins to a wire rack and leave to cool.
- Melt the chocolate in a microwave or brain marie and spoon it into a piping bag.
- Pipe the chocolate across the top of the muffins in a zigzag motion.

- 1 large egg
- 120ml/ 4fl. oz/ 1/2 cup sunflower oil
- 120ml/ 4fl. oz/ 1/2 cup milk
- 375g/ 12 1/2 oz/ 2 1/2 cups wholemeal flour
- 2 teaspoon baking powder
- 200g/ 7oz/ 3/4 cup caster (superfine) sugar
- 1 orange, zest finely grated
- 75g/ 2 1/2 oz/ 1/2 cup chocolate chips
- 110g/ 4oz/ 1/2 cup dark chocolate, minimum 60% cocoa solids, chopped (To decorate)
