Description
These spinach and pine nut muffins have the delicious combination of buttery pine nuts and tender spinach leaves. This can a be perfect snack for your parties with a savory twist on muffins.
Instructions
- Preheat the oven to 180°C (160° fan)/ 350 F/ gas 4 and oil a 12-hole muffin tin with paper cases.
- Put the spinach in a large saucepan with 2 tablespoon of water.
- Cover the pan and put over a medium heat for 4 minutes or until the spinach has cooked right down.
- Squeeze out any excess moisture and puree in a food processor.
- Beat the egg in a jug with the oil, yogurt, cheese and spinach puree until well mixed.
- Mix the pine nuts, flour, raising agents and salt in a bowl, then pour in the spinach mixture and stir just enough to combine.
- Divide the mixture between the paper cases, then bake in the oven for 20-25 minutes.
- Test with a wooden toothpick, if it comes out clean, the muffins are done.
- Serve warm.

- 110g/ 4oz/ 4 cups fresh spinach
- 2 large eggs
- 120ml/ 4fl. oz/ 1/2 cup sunflower oil
- 180ml/ 6fl. oz/ 3/4 cup Greek yogurt
- 110g/ 4oz/ 1 cup parmesan, grated
- 75g/ 2 1/2oz/ 1/2 cup pine nuts, chopped
- 225g/ 8oz/ 1 1/2 cups plain (all purpose) flour
- 2 tablespoon baking powder
- 1/2 tablespoon bicarbonate of (baking) soda
- 1/2 teaspoon salt
