Description
These mixed pepper cupcakes have a touch of spice with the blend of peppers. The use of different peppers makes these cupcakes not only delicious but super colorful and irresistible.
Instructions
- Preheat the oven to 180°C (160° fan)/ 350 F/ gas 4 and oil a 12-hole muffin tin with paper cases.
- Fry the peppers in the olive oil for 10 minutes or until soft.
- Beat the egg in a jug with the oil, yogurt and cheese until well mixed then stir in the peppers.
- Mix the flour, raising agents and salt in a bowl, then pour in the egg mixture and stir just enough to combine.
- Divide the mixture between the moulds then bake in the oven for 20-25 minutes.
- Test with a wooden toothpick, if it comes out clean, the cupcakes are done.
- Serve warm.

- 1 red pepper, deseeded and sliced
- 1 orange pepper, deseeded and sliced
- 1 green pepper, deseeded and sliced
- 2 tablespoon olive oil
- 2 large eggs
- 120ml/ 4fl. oz/ 1/2 cup sunflower oil
- 180ml/ 6fl. oz/ 3/4 cup Greek yogurt
- 110g/ 4oz/ 1 cup Parmesan, grated
- 225g/ 8oz/ 1 1/2 cups plain (all purpose) flour
- 2 teaspoon baking powder
- 1/2 teaspoon bicarbonate of (baking) soda
- 1/2 teaspoon salt
