Description
These chocolate and pistachio macaroons are perfect for special occasions because they have perfect combination of rich chocolate and nutty pistachio flavor which makes them irresistible.
Instructions
- Oil and line a large baking tray with baking parchment.
- Grind the almonds, icing sugar and cocoa together to a very fine powder. Whisk the egg whites to stiff peaks then fold in the almond mixture.
- Spoon the mixture into a piping bag fitted with a plain nozzle and pipe 2 1/2cm/1'' rounds onto the baking tray.
- Leave them to stand for 30 minutes to form a skin. Preheat the oven to 170°C (150° fan)/ 325 F/ gas 3. Bake for 10-15 minutes.
- Slide the paper onto a cold work surface and leave them to cool. Chop the chocolate and place in a bowl.
- Heat the cream until it starts to simmer, then pour over the chopped chocolate and stir until the mixture has cooled and thickened. Chill until thick enough to pipe.
- Spoon the ganache into a piping bag fitted with a medium plain nozzle and pipe an even round onto half of the macaroons.
- Sandwich together with the other half, then dip the edges in chopped pistachios.

- 175g/ 6oz/ 1 1/2 cups ground almonds
- 175g/ 6oz/ 1 1/2 cups icing (confectioners') sugar.
- 28g/ 1oz/ 1/4 cup unsweetened cocoa powder
- 2 large egg whites
- 110g/ 4oz dark chocolate, minimum 60% cocoa solids(To decorate)
- 110ml/ 4fl.oz/ 1 cup double (heavy) cream (To decorate)
- 2 tablespoon pistachio nuts, chopped (To decorate)
