Description
These chocolate cream macaroons have rich and luscious chocolate and cream texture that melts in your mouth with each bite. These macaroons are perfect for celebrations.
Instructions
- Oil and line a large baking tray with baking parchment.
- Grind the almonds, and icing sugar together in a food processor to a very fine powder.
- Whisk the egg whites to stiff peaks in a clean bowl then fold in the almond and sugar mixture.
- Spoon the mixture into a piping bag fitted with a plain nozzle and pipe 2 1/2cm/1'' rounds onto the baking tray.
- Leave them to stand for 30 minutes to form a skin.
- Preheat the oven to 170°C (150° fan)/ 325 F/ gas 3.
- Bake for 10-15 minutes. Slide the paper onto a cold work surface and leave the macaroons to cool completely.
- Chop the chocolate and transfer to a bowl. Heat the cream until it starts to simmer, then pour over the chopped chocolate and stir until the mixture has cooled and thickened.
- Chill until thick enough to pipe.
- Spoon the ganache into a piping bag fitted with a medium plain nozzle and pipe an even round onto half of the macaroons.
- Sandwich together with the other half.

- 175g/ 6oz/ 1 1/2 cups icing (confectioners') sugar
- 2 large egg whites
- 110g/ 4oz/ 1/2 cup white chocolate (To decorate)
- 110ml/ 4fl. oz/ 1/2 cup double (heavy) cream (To decorate)
