Description
These mango, coconut and lime cakes are have a great combination of mango chunks, creamy coconut and zesty lime twist. These cakes are the perfect addition to your tropical dessert table.
Instructions
- Preheat the oven to 190°C (170° fan)/ 375 F/ gas 5 and line a 12-hole silicone cupcake mould.
- Combine the flour, sugar, butter, eggs, mango puree, coconut and lime zest in a bowl and whisk together for 2 minutes or until smooth.
- Fold in the chopped mango then divide the mixture between the moulds.
- Bake in the oven for 15-20 minutes.
- Test with a wooden toothpick, if it comes out clean, the cakes are done.
- Transfer the cakes to a wire rack and leave to cool then sprinkle with coconut.

- 110g/ 4oz/ 1/2 cup self-raising flour, sifted
- 110g/ 4oz/ 1/2 cup caster (superfine) sugar
- 110g/ 4oz/ 1/2 cup butter, softened
- 2 large eggs
- 2 teaspoon mango puree
- 28g/ 1oz/ 1/8 cup desiccated coconut
- 1 lime, zest finely grated
- 150g/ 5oz/ 1 cup very ripe mango, finely chopped
- 2 tablespoon desiccated coconut (To decorate)
