Instructions
- Preheat the oven to 180 C (160 fan)/350 F/ gas 4 and oil a 12-hole silicone muffin tin.
- Beat the egg in a jug with the oil and milk until well mixed.
- Mix the flour, baking power, sugar, cranberries and 3/4 of the mixed seeds in a bowl, then pour in the egg mixture and stir just enough to combine.
- Divide the mixture between the moulds and sprinkle over the rest of the seeds, then bake in the oven for 20-25 minutes.
- Test with a toothpick, if it comes out clean, the muffins are done.
- Transfer the muffins to a wire rack and leave to cool.

- 120 ml /4 fl. oz / 1/2 cup milk
- 375 g / 12 1 /2 oz / 2 1/2 cups whole meal flour
- 2 tsp baking powder
- 200 g / 7 oz / 3/4 cup caster (superfine) sugar
- 75 g /2 1/2 oz / 1/2 dried cranberries
- 2 tbsp sesame seeds
- 2 tbsp sunflower seeds
- 2 tbsp hemp seeds
- 2 tbsp pumpkin seeds
